Course Description

This course examines the basic chemistry of food products, how to be creative, use their flair and imagination to create interesting and appetizing dishes. Impart knowledge of how ingredients perform under different conditions in food product development work. And to provide students with basic information about concepts of food safety and hygiene

EXPECTED LEARNING OUTCOMES

By the end of the course unit, students should be able to:

Explain what is food chemistry and microbiology is

Describe the chemical composition of food

Describe the essential concepts, principles of food safety and hygiene through out the food chain

Identify major factors affecting food quality

Discuss different types of food spoilage and poisoning
