By the end of the course unit, students should be able to:
Explain what is food chemistry and microbiology is
Describe the chemical composition of food
Describe the essential concepts, principles of food safety and hygiene through out the food chain
Identify major factors affecting food quality
Discuss different types of food spoilage and poisoning
